Orange Parfaits
4 serving-size cook and serve vanilla pudding mix
1 3/4 cups Florida Orange Juice
1 8oz. carton vanilla or pineapple yogurt
3/4 cup coarsely crushed gingersnaps or chocolate wafer cookies (about
10)
Orange peel curls and mint leaves for garnish
Prepare
pudding mix according to package directions, except use 1 3/4 cups
orange juice instead of milk. Transfer pudding to bowl, cover with
plastic wrap and chill thoroughly. Before serving, fold yogurt into
pudding. Divide 1/3 of pudding among 6 parfait glasses. Sprinkle with
1/2 of the crushed cookies. Repeat pudding and cookie layers. Top
with remaining pudding. If desired, garnish with orange peel curls
and mint. Makes 6 servings.
